LAS VEGAS – The Bootlegger Italian Bistro appears on nearly every list of top classic Italian restaurants in Las Vegas, but now in addition to timeless classics, the restaurant is serving up gluten-free, paleo-friendly (lean meats, fruits and vegetables, nuts and seeds) and other healthy Italian options for guests on restricted diets or those choosing a healthier lifestyle.
“We have been serving our gluten-free specialties for some time,” noted Ronnie Mancuso, vice president and chief operating officer for The Bootlegger. “The gluten-free pizza is very good and very popular, however I went on a Paleo diet about a year ago and lost almost 50 pounds, so recently asked the chef to create several paleo-friendly dishes as an option for both myself and our guests.”
While not on the printed menu, the new paleo-friendly options are available by request from the servers. Current items include grilled chicken breast, served with artichoke hearts, green olives, roasted red peppers, mushrooms, pimentos and a touch of sherry; grilled rainbow trout/puttanesca, served with Kalamata olives, capers, broccoli or spinach, tomatoes, roasted red peppers, white wine, red pepper flakes and lemon juice; and a NY strip steak, a 14-ounce Angus served with sautéed spinach and mixed Italian greens.
Gluten-free items on the menu include pasta with marinara sauce, cheese ravioli, spinach ravioli and pizza.
Other healthy Italian options include pollo griglia, a grilled boneless breast of chicken served over a bed of sautéed Italian greens, served with whole grain spaghetti and Chef Maria’s marinara sauce; and pollo insalata, grilled boneless breast of chicken over crisp spring mix tossed in raspberry vinaigrette with fresh asparagus and eggplant bruschetta. Both items are also available with salmon.
