Latin-Inspired Contemporary Menu Promises to Be Uncompromising with a Modernized Technique
LAS VEGAS, NV – Mariposa Cocina & Cocktails is scheduled to debut in southwest Las Vegas this fall. The 8,000 square-foot contemporary eatery will fill the former Shiraz space and feature a stylish dining room complete with wall murals and photogenic activations. Spearheaded by Executive Chef Robert Lomeli and consultants Antonio Nunez of The Stove in Henderson and Lanny Chin of The Slanted Door at Caesars Palace, the Latin-inspired, contemporary menu promises to fuse culture with experience.
“I’m looking at traditional cuisine that has been around for hundreds of years, and conserving those unique flavor profiles, techniques and traditions in my dishes,” said Executive Chef Robert Lomeli when asked about his plans for the restaurant’s menu. “I’m taking those traditions and twisting them around a little bit by using high-quality ingredients. This way, we are able to modernize each dish without compromising on tradition.” Standout dishes on the menu include a tableside Queso Fundido A La Raclette, Guacamole Negro, Empanadas De Huitlacoche, Enchiladas Del Jardín (vegetarian), Surf & Turf Tacos and a Churro Bread Pudding for dessert.
A comprehensive bar program is in the works, with a wide selection of the finest tequila and mezcal being sourced for the restaurant’s handcrafted cocktail menu. Mariposa Cocina & Cocktails will evolve from an approachable neighborhood cantina to a posh, late night hot spot with live entertainment and a nightly hookah service, enjoyed in a lounge-style setting.

ABOUT CHEF ROBERT LOMELI
Robert Lomeli is a locally celebrated chef in Las Vegas who was classically trained at Le Cordon Bleu College of Culinary Arts. Lomeli has extensive experience working in the kitchens of various dining concepts both on and off the Las Vegas Strip, including The Villas at the Mirage, Brand Steakhouse at the Monte Carlo, Double Barrel Roadhouse at the Monte Carlo, Black Mountain Grill in Henderson and Top of The World at the Stratosphere. Lomeli’s most recent feat was winning season 23 of The Food Network’s Guy’s Grocery Games.
